The base recipe is Holy Gose, but we add the botanicals (lemon peel, juniper, cinchona bark, grains of paradise, lemongrass) at knockout (when the boil ends) and run it through the hop back (to remove any excess botanicals) before it goes to the fermenter. After the first day of fermentation, we add cucumber and salt and let it finish fermentation before heading to the brite and packaging. This beer came about after some discussions about beer cocktails and barrel aged gins - we wanted to see if we could create a “beer cocktail” with only beer but that had a “cocktail” like flavor.
